Maple, Orange & Cinnamon Granola Breakfast Pots with Raspberry Coulis & Pomegranate

I’m delighted to share with you this delicious Maple, Orange & Cinnamon Granola Breakfast Pots with Raspberry Coulis & Pomegranate by recipe and food creator Anna Stanford @annasfamilykitchen.

Inspired by the fragrance notes from @romaine_ldn ’s Pomegranate Rouge Candle I have created these indulgent breakfast pots. They start with homemade Granola subtly flavoured with orange, cinnamon & maple. Taking breakfast to the next level, I have layered the granola with coconut yogurt, a quick raspberry & orange coulis & a sprinkle of sweet fresh pomegranate seeds.

Method:

Start with the granola… 

Preheat oven at 140°c fan.

Miix together all the ingredients, except the nuts, & lay on a baking tray. Bake for 30 minutes at 140°c fan turning the mix at least once during the cooking time.

Tip into a storage jar & stir in the nuts.


Next make the coulis… 

Simmer the raspberries, orange juice & agave for 5 minutes.

Assemble the pots…

Layer the granola, yogurt & coulis into glasses finishing with the coulis & pomegranate seeds.

Ingredients:

Granola Serves: 12

400g porridge oats

120g mixed seeds 

80g desiccated coconut

100ml maple syrup

3 tbsp coconut oil

Zest & juice of 2 oranges

1 tsp ground cinnamon

50g pistachio nuts

50g flaked almonds

For 4 breakfast pots: 

16 tbsp Granola 

 350g Yogurt

250g raspberries

Juice of 1 orange

2 tsp agave nectar 

4 tbsp pomegranate seeds
